About Us

We all grew up with food around us, my mother, grandmother and great grandmother were always in the kitchen creating the most amazing food for family, friends and anyone who turned up at our house. It was a very natural choice for me to become a chef.

My wife grew up in Japan, and went to hotel school and worked at the Hilton Tokyo moved to Christchurch to study English for 2 years. When she moved to Brisbane in 2013 we worked at an amazing café in Hawthorn and we both developed our love for all things café, coffee, food, lifestyle.

I started my career here on the Gold Coast, finishing a Chefs apprenticeship in 2000 and have worked in Sydney, Melbourne, Wellington, Brisbane, Tokyo. In a full-circle moment we ended up back on the Gold Coast settling down to raise our son. Our café is named after him, the Japanese kanji for his name means Pegasus that’s why we named it the flying horse.

I love simple flavours and combinations using fresh ingredients to create clean, yet indulgent, food which I learnt over the 20+ years in the industry.
